Uzbek Eggplants

I love eggplants. My secret is that I am changing some of the original Uzbek and Tajik recipes because I find them fatty.

The nourishment in developing countries as Uzbekistan and Tajikistan depends on the number of family members. A very traditional family in Central Asia might be very large. The population in Uzbekistan has increased fairly steadily over the past 60 years, from around 6 million in the 1950s to almost 34 million today. To feed such big families is not that easy. Therefore, meals are highly-fat and in most cases unhealthy.

Fried Eggplants is one of my favorite dishes. I have changed the original Tajik & Uzbek recipe a bit, as usual.

Ingredients:

Eggplant - 1-2 pc.

Tomatoes - 2 pc.

Onion-2pc. small.

Salt-to taste

Garlic - 3 heads

Bell Pepper - 1pc.

Flour-30 g

Olive or Vegetable oil-50 g

Ground black pepper-on your taste
