Damlama is a shepherd's dish

If you ask Uzbeks and Tajiks about the favorite meal they would definitely say Plov or Manti. I am offering to go beyond the two and add to your knowledge list one more recipe -Damlama or Basma. Damlama is a male meal:) Earlier, cattle and sheep herders traveled long distances in search of greener pastures. It could take them weeks or months and Damlama was the easiest meal to cook far away from home. Damlama is a one-pot recipe.

All we know that that fruits and vegetables taste best with its season but now we are leaving in a world where vegetables are available the whole year. So why don't you try to throw all vegetables into one pot and get the most delicious meal? The main ingredients are seasonal vegetables and meat.  In case you are a vegetarian, replace the meat with eggplants. Be careful, originally the dish is prepared with using lamb fat or grease, ask before making an order what oil has been used. 

Ingredients: (servings 4)

  • 500gr meat (any- lamb, beef, chicken)
  • Olive oil 80 ml
  • 2 big-sized onions
  • 1 eggplant
  • 5 small-sized tomatoes
  • 3 Paprikas
  • 4 Carrots
  • 1 Cabbage
  • Seasonal herbs
  • black pepper seed on your taste
  • 1 tablespoon of Zira
  • 1 tablespoon of coriander seeds 
  • 300 ml of water
